Sweet Mushrooms..mmm..

I'm lovin my whole frozen stuff at breakfast at the moment, so today I whipped up another frozen treat. It's soaked cashews and dates blended with a little vanilla essence, a splash of maple syrup and a frozen banana. Yummo, it was more of a dessert really but still uber-good for brekkie.

After a long work day (!) i had a small salad with baby spinach, mung beans, sweet potato & flavored tofu and topped with my delicious mango chutney.

I spent the morning making the mango chutney & boy it is so good. I use to think chutneys looked disgusting but I am such a changed girl, now I'm obsessed!! I could eat jars of this thing seriously

Anyways I was extra hungry after my small salad so I had some more of my bliss balls from the other day, they were still good.
That day mum had picked up some extra large mushrooms, I'm talking about monster, mutant mushrooms they were huge and oh so delicious. I grilled them after filling them with a sweet potato mixture and some more mango chutney!! It was pretty good though the sweet potato kind of overpowered my beloved mushroom.

I was seriously craving some cold goodness after dinner and opened my freezer, to my relief finding some forward thinking genius (thanks mum!) had purchased some vanilla soy ice-cream, I then proceeded to eat a large bowl.
The name doesn't lie it's so good!

omg i love chutneys and relishes...i have a tomatoe relish everyday at lunch which is kinda like chutney only less chunky. thats so cool you made your own!

I have never had mango chutney! It looks really yummy to me though! That is a massive mushroom! Glad you had such a great day of eats! Happy Friday!

So your breakfast (no offense) doesn't look that appetizing but it sounds appetizing. Was it?

That salad, however, looks really delicious.

And the mushrooms look interesting. I wouldn't think of pairing sweet potatoes & mushrooms together. But maybe it's good.

And the So Good ice cream, does in fact look So Good!

Is that ice cream an Australian brand? I've never seen it in the US. I was thinking it would be awesome for me to send you some Lara bars and you could send me some Australian brand ones, but then I looked up shipping costs and whoa it's almost $80 to ship a half a pound package!! You can make your own Lara Bars though-- just soak some dates (makes them easier to break down) and food process them with raw nuts (cashews, walnuts, almonds) and other things (chocolate, cinnamon, raisins, etc). Very easy and less expensive that way!

I can't believe how big that mushroom is!! Looks good though I loove mushrooms.

If you ever come across a good crumb cake recipe, let me know ;)

Wow, I was so scared from the "Sweet Mushrooms" title of your post that you blended mushrooms with your banana! Icky.

I've never actually had chutney, but it looks yum!

Yeah, I basically just put the oven on broil because I thought it would be a faster way to roast my chick peas and I was ready to eat them, lol : ) But, yes, I thought they were very good.

I'll have to admit I've never had chutney myself and in fact, I wasn't entirely sure what it was until I looked it up but it does look very yum!

Yum sounds delicious! I love the idea of a giant mushroom stuffed with sweet potato...I'll have to give that a try.

The frozen breakfast you had sounds and looks good. That's a very creative thing to do for breakfast and keep it interesting and still healthy and delicious.
